Jamaican Rice 'n Peas

                                

INGREDIENTS

250gms Dried Red Kidney Beans      - Soak overnight

                                                           - Wash Well

 

1 Can Coconut Milk (400mls)

2 teaspoons Mama Blu’s Dis Da Mild Wan Chilli Sauce        - if you like it Hot 1teaspoon Voodoo Chilli

1 Bacon Rasher (Optional)

½ bunch Thyme                  -Tie into a bunch with Twine

700gms Long Grain Rice

½ bunch Spring Onions        or Escalions    - finely sliced

water

salt & pepper

METHOD

          ~ Wash Kidney Beans

          ~ Place the Kidney Beans in a large Sauce Pan & bring to the boil with the Coconut Milk & water to Cover

                     (DO NOT ADD SALT AT THIS STAGE)

          ~ Add the Red chillis & bacon

          ~ Simmer until the Kidney Beans are soft – Add more water if needed

          ~ Once the Kidney Beans are soft – Add the Rice, Thyme, Spring Onions, Salt & Pepper

          ~ Slowly bring to the boil on medium heat

          ~ Cover & simmer on a low heat until all the liquid has evaporated & the Rice is cooked

          ~ If using Bacon, remove before serving.
